Rather than create a "new" style of absinthe, we thought it best if America first became reacquainted with the true historic character of the spirit, so we strictly followed the old formulas and processes to make Marteau.  No effort or expense has been spared to bring you the most precisely accurate expression of historic absinthe—from the recipe and traditional ingredients to the process and packaging.

 

Just as the most prestigious brands of more than a century ago, Marteau is made with pure grape spirit and real, whole herbs and seeds, not inexpensive alcohol and essences. It is literally hand-colored with the leaves of Roman Wormwood and Melissa.  Marteau contains only whole  botanicals and spirit.

Wormwood, aniseed and fennel.  These are the "holy trinity",  the three principal ingredients of all superior, traditional absinthe.  While there are over a hundred varieties of wormwood, only Artemisia absinthium can make absinthe.  And rather than rely on the licorice-candy flavor of star anise or inexpensive anise oil, we use real aniseed, balanced by the earthy spiciness of fennel seed.

Marteau is a true belle époque absinthe and the first in its class to appear in America since the ban of 1912.

The Heart of the Hearts

Working with such an amount of leafy plant matter in the still requires skill and constant attention.  In making Marteau, only the choicest cuts of the distillate are allowed in the final product: the heart of the hearts. Any portion that doesn't meet our exacting standards is discarded.  Collecting and blending these fractions is time-consuming and demands constant intimate interaction with the distillation process.  In addition, the final fraction of the distillate, the "tails" which are rich in flavor, but low in proof, are set aside to be included in the next run.  This recycling of tails is the foundation of the well-respected "Absinthe Suisse" process.  It is this labor-intensive attention to quality and devotion to tradition which makes Marteau the finest absinthe in America.
